The Daily GlyphChis Hart posted instructions on this for Windows clients. Here is how to do it on the Mac:
Right-Click or control-click on the Hippo client app in the finder, choose "Show Package Contents" and look in Contents/Resources/app_settings/ and you will find settings.xml. Open that in a text editor (I use SubEthaEdit), search (command-f) for AutoMimeDiscovery and change the 0 to 1 as shown in Chris Hart's blog.
